If your into making your own sauerkraut and fermented foods then you will definetly be familiar with one of these vessels. If you've not come across this type of vessel before then it certainly will enhance your whole culinary experience and add a new dimension to your kitchen.
The vessel has a moat lock lid (water is poured into the lid housing so that when the lid is put in place an airtight seal is produced). This allows a perfect air tight seal within the fermentation chamber creating ideal conditions for fermenting, yet allows excessive gas to escape when pressure builds up too high.
The vessel comes with a compression weight thrown with a porcelain stoneware blend clay that has been high fired to stoneware creating high vitrification and better hygiene. This weight sits ontop of the chopped cabbage creating the ideal conditions for sauerkraut production.
Approx volume 2 litres. Ideal for 1to 2 cabbages, approx 1.5-2kg of raw cabbage.
All parts are dishwasher and oven safe and can be scalded for hygiene.
